At 5:45 on a Wednesday in July, the shortest walk in Alys Beach tells you what has changed. Cross Somerset Street from the Amphitheatre and you land at the Town Center's new corner, where Indaco, the Indigo Road Hospitality Group's modern Italian restaurant, sits alongside its sibling O-Ku, which opened in 2024. Two years ago that block was quieter and the concert lawn was the whole event. Now the lawn is the middle of an evening, not the end of one.
That shift matters more than a menu addition. For residents who have been sequencing summer Wednesdays around a 6 PM concert and a scramble for dinner afterward, the Town Center has quietly become the anchor of the week. The concert is still the draw. What comes before and after it is what actually changed.
What Indaco's arrival did to the calendar
The team behind O-Ku, The Indigo Road Hospitality Group, brought a fresh Italian concept right into the heart of the Town Center. Indaco Alys Beach officially opened on July 2, 2026. That is two weeks of operating history as of this writing, which is not enough to judge a kitchen but is plenty to judge a floor plan. The dining room features booth seating, hand-painted tiles, and bar seating overlooking the Town Center's lawn. That last detail is the one to notice. A bar that faces the concert lawn is the closest thing Alys Beach has ever had to a proper pre-show room.
Practical hours matter here. The restaurant is open Monday to Thursday from 4 pm to 10 pm, Friday through Sunday from 11 am to 10 pm, and brunch began July 10. A 4 PM Monday-through-Thursday open means Indaco is ready two hours before the Wednesday concert begins. Reservations sit on OpenTable, which is not universally true in this market.
The kitchen has a specific point of view. The program centers around a wood-fired oven and fresh pastas with chef Dakota Watson at the helm. There is a "For the Table" experience, a family-style meal featuring three courses selected by the chef. For a summer house full of guests, that is the shortcut. Order once, keep talking, be on the lawn by 6.
Wednesday still runs the week
The Amphitheatre concert schedule is the backbone of a summer resident's July and August. Free, outdoor, and short enough not to eat the whole evening. This year's rhythm has been consistent: Alys Beach's Town Center hosts a relaxed summer evening of food, music, and community, with an open-air concert from 6 to 8 PM in the Alys Beach Amphitheatre. Bring low chairs or a blanket.
The June 25 Merchant Walkabout, which paired the concert with a strolling tasting through Town Center, gave a preview of the new template. The Summer Savor ran from 4 to 6 PM, with complimentary seasonal lite bites from restaurant merchants while supplies last, followed by shopping with retail merchants through Town Center. If that format returns later in the summer, it is the highest-yield night of the season for a resident already living inside the walking radius.
A workable Wednesday sequence
Here is how a Wednesday actually runs now, using only the fixed elements above:
- 4:00 PM. Indaco opens. If you want the bar seats that face the lawn, this is when they exist.
- 5:15 PM. Order the "For the Table" or a shared pasta. You are eating early on purpose.
- 5:55 PM. Walk across Somerset Street. Chairs already dotted, kids on the grass, dogs on the perimeter.
- 6:00–8:00 PM. Concert. The set list this summer has run through acts like Fly By Radio, with rotating bands each week.
- 8:15 PM. If the evening still has legs, walk to NEAT for a nightcap or back to Raw & Juicy's courtyard for something without a proof rating.
The point of writing it out is that the sequence is different from last summer's default, which was concert first, dinner second, dinner often at George's upstairs or a drive to Rosemary. Both are still good options. Neither is the shortest route anymore.
The Fourth is a weather bet, not a plan
The Independence Day script in Alys Beach is unusually specific, and worth memorizing if you have houseguests arriving. The morning starts with the Donut Eating Contest sponsored by Charlie's Delights, beginning at 9 AM in the Amphitheatre, with categories for children, youth, and adults. The evening brings a live concert in the Amphitheatre at 7 PM, followed by a fireworks display over the Gulf at 9 PM.
The important asterisk is on the fireworks. The display is weather and Gulf-condition dependent, and while conditions at Alys Beach may appear favorable, the show can be canceled if conditions near Destin Harbor are deemed unsafe for the fireworks barge to travel or operate. That is worth knowing because a calm-looking sky above 30A does not guarantee anything. The barge origin matters more than the local forecast. If you have guests who fly in for the Fourth, brief them on the barge, not the weather app.
The shoulders of the evening
Every good summer night has a before and an after, and Alys Beach carries those better than most 30A stops because the venues sit inside a five-minute walk.
Before. Raw & Juicy has been the daytime anchor for wellness programming, hosting Vinyasa yoga in the Amphitheatre, matcha and refreshments, and a restorative sound bath. Morning energy, then a slow reset before the concert crowd arrives.
Later. NEAT hosts Wine & Song every Tuesday, and the team runs whiskey tastings and wine events through the year. It is the quietest room in Town Center after 9 PM and reads as such.
Alternative dinner. Caliza remains the sit-down evening. Happy Hour runs Tuesday through Saturday, 5:30 to 6:30 PM at the bar only, with dinner service Tuesday through Saturday, 5:30 to 9:00 PM. One number to file away for later in the year: Caliza's seasonal closure runs November 29 through March 1. If your family holiday plans lean on Caliza, they will not lean on it in December.
Second alternative. George's stays what it has always been, an upstairs-downstairs room with a deck. Nothing about the new Town Center changes that. It is still the answer when a table of eight lands on you unannounced.
The change is not a new restaurant. The change is that the Town Center now has a room facing the lawn and hours long enough to hold both sides of the concert.
Reading the summer, not just attending it
Two seasons ago, if you had one Wednesday to spend in Alys Beach, the honest advice was to skip dinner locally, bring a cooler, and eat later. That advice is now wrong. The Town Center block that runs from O-Ku through Indaco to the Amphitheatre lawn is doing something the community has been building toward for a decade, which is compressing a full evening into a walk. The concert series brings the crowd. The retail merchants keep the block open through 8. The 4 PM restaurant open means the pre-concert hour finally has a room.
For a resident, the practical takeaway is smaller than the trend. Wednesdays get booked earlier. Fourth of July hinges on Destin Harbor. Caliza needs to be used before Thanksgiving. Raw & Juicy owns the mornings around holiday weekends. And when Indaco settles in past its opening month, the family-style order is the way to feed a house.
